Named after the largest, most vibrant and Italian influenced barrio in Buenos Aires, Palermo is the sassy younger sister to celebrated CBD steakhouse, San Telmo. Centring around the Argentine parilla grill theme, Palermo’s showpiece is undoubtedly the blistering embers of its rustic red brick Asado fire pit. A spectacle of searing flames and glowing mallee-root charcoal, whole splayed beasts are grilled for hours creating meat that is fall-off-the-bone tender with a comforting bush campfire feel. “Along with the open fire pit and parilla grill, Palermo pays tribute to the important influence Spanish and Italian cultures have had on Argentinian cuisine. Think of it as a modern spin on 500 years of culinary history.” head chef, Ollie Gould (ex Stokehouse). For the website we combined traditional Fileteado graphic elements designed by talented artist TJ Guzzardi, with a more contemporary urban landscape, bringing the spirit of Argentina to Melbourne’s famed laneways.
