Poppy Bouquet Illustration

I pretty much avoid using any and all gradients in my work, but the new-ish freeform gradient tool in Illustrator might just change that.

The main problem I've run into with it is that once I’ve added the gradient to an object, I can’t flip it otherwise I totally lose the effect. Any ideas on how to lock the gradient to the object?
