The distillation process is meticulously carried out in small copper pot stills to ensure the highest quality. Black pine needles, harvested from the serene forests surrounding Kyoto, are carefully selected and infused into the spirit. This infusion imparts a distinctive, resinous aroma that sets Black Bird Gin apart. In addition to black pine, a blend of local botanicals such as yuzu, green tea, and malted cereals are incorporated. Each botanical is distilled separately to preserve its unique characteristics before being harmoniously blended.
