In a complex UI like this, you're focusing on solving different problems at different breakpoints. Since not everything translates cleanly to a smaller screen size, the key is to focus on mission critical information and actions at each level.
For example, on desktop quick, bulk actions stay front and center for easy email management. Tags line up in one column so it’s easy to scan your entire inbox and compare quickly.
On tablet in order to save horizontal space tags are stacked vertically with the rest of the content, and the stars serve more of a visual reference point for important emails, so they can move the the opposite side.
And on mobile, user avatars are added to make the list easier to scan and differentiate line items, which also helps with truncated emails.
