Sign up page designs should be easy to understand and require no thought from the user. The space on the right can be utilized to show off the product UI, features, or customer testimonials to add a little bit of social proof. Anything that can help encourage users to take the next step and not fall out of the funnel.

However, if you don't have any of those things, it's nice to just add a pretty image to make it a little more visually interesting and less stale.
