Olives
Olives are not naturally black
Ripe olives vary in color from dark brown to dark purple. They are artificially turned black before they are sold, by placing them in an alkaline solution, and then oxidizing them. They maintain their dark color thanks to iron gluconate, which is added to the brine as a stabilizer.
