Know Thy Customer

Something I wanted to invest time into was how to create an elevated experience for customers visiting a restaurant. How would an establishment track the preference of returning customers to keep them coming back and allow there to be a list of menu items that the server could know that customer likes or dislikes.

ATTACHED is a user journey of how an establishment could track that per visiting customer.

DESIGNER QUESTION:
What would you do differently in the UX? What would you remove from the UI and user journey to make the app better for the merchant? Appreciate your feedback.
