I’ve been currently studying the theory of baking on my own. I absolutely love to bake and study the scientific aspect of it. I’ve been studying yeast doughs lately and I’ve heard every single home cook talk about how you’re supposed to take care of it.
They’re supposed to be knead for good 10 to 15 mins in order to develop gluten, which gives that bread like texture to the dough when baked.
Also, doughs are supposed to be treated like living creature, and has to be kept in a nice and warm place for letting it ferment and rise, something that I learnt from Gemma Stafford (Bigger Bolder Baking).
